Our library has a generous amount of Easter books for both young children and adults, but very little for elementary, middle school, or youth ages. Can you recommend any for these age groups?

That is always an issue for Easter books - I also struggle to find good chapter type books for middle grade, and teens. Here are a few that we have in our library:
Easter by Ben Avery (great for teens who love graphic novels)
The secret of the Hidden Scrolls series, book 9 - The Final Scroll - This is a great time traveling series - the Final Scroll is specifically on Christ's death and resurrection (for age 8+)
The Case for Christ for Kids by Lee Strobel - non-fiction presenting evidence for Christ's life and death, and resurrection for kids ages 8-12 (I think there might also be a version for teens - "student" or "youth" edition.
The Lion, The Witch and The Wardrobe by C.S. Lewis - this is the Chronicles of Narnia book 2 where there is strong paralels with Christ's sacrificial death.
